En Pappilotte

This is a French cooking technique that is very easy.
Simply place a thin fillet in the centre of a piece of foil or baking paper.

Add quick cooking vegetables such as slivers of leek, carrot, capsicum or snow peas. Drip a little liquid, oil or butter over the fish and vegetables and wrap the package tightly. Put in the oven and cook at 200ºC for 8 to 10 minutes.

Try the following combination of flavourings: lemon zest and bay leaves or soy sauce, sesame oil and ginger.
